The Parisian Café was Ariadne's dream in which Cobb introduced her to shared dreaming.
Cobb brought Ariadne into one of her own dreams in order to show how shared dreaming actually works, and how simple it can be to manipulate someone into accepting a dream as reality. When Cobb reveals to Ariadne that she has been dreaming through their entire conversation, she panics and loses control of the dream, causing it to collapse.
